- First heat the olive oil in a saucepan. Then add the diced parsnip, sweet potato, carrots, red onion, leek and celery. Cook them for 5 minutes until the vegetables turn a little colour.
- Then add the water and wait for them to boil. Cover the pan with a lid and cook for 20 minutes, until the vegetables are soft.
- Blend the ingredients into a smooth creamy texture.
