Healthy Root soup

clock Cooking time: 45 minutes yield Serving for: 4

  • 2 fresh sticks of celery (diced finely)
  • 1 Small red onion (diced finely)
  • A fresh red chilli (take half) Sliced.
  • 445ml clear water
  • 1 Sweet potato (diced finely)
  • Put it back again into the pan and add the cumin and chilli. Season the soup to taste.
  • 1 teaspoon cumin (freshly grounded)
  • 1 parsnip (diced finely)
  • 2 tablespoons olive oil
  • Simmer for another 10 minutes and serve hot.
  • 2 Small carrots (diced finely)
  • 1 fresh leek (finely sliced)
  1. First heat the olive oil in a saucepan. Then add the diced parsnip, sweet potato, carrots, red onion, leek and celery. Cook them for 5 minutes until the vegetables turn a little colour.
  2. Then add the water and wait for them to boil. Cover the pan with a lid and cook for 20 minutes, until the vegetables are soft.
  3. Blend the ingredients into a smooth creamy texture.
