Fresh Celeriac with Wild Mushroom

  • 50g butter
  • 7 tablespoon fresh dill, chopped
  • 15g dried porcini or cep mushrooms soaked for 20 minutes in 150ml boiling water.
  • 1 medium onion. finely chopped
  • 200ml creme fraiche
  • 110g celeria. peeled and roughly chopped
  • 290 ml water
  1. Heat a saucepan and melt the butter. Cook the onion and celeriac. Cover the pan with a lid and wait for 10 minutes, without browning.
  2. Strain the water of the soaking mushrooms into the pan. Add the mushrooms to the pan after chopping them.
  3. Pour the water and bring to the boil and simmer. Wait until the vegetables are soft.
  4. Blend the mixture into smooth.
  5. Add creme fraiche and dill. Stir them well. Season to taste.
  6. Reheat gently before serving.
